One of the simplest recipes you can make in 30 mins. Wonderful colour and flavour. Can be served as the main or side dish.
- Risotto 1 1/2 cups
- Diced Shallot 1/3 cup
- Butter 3-4 tbls
- White wine 1 cup
- Bone broth/chicken stock 6-7 cups (as required)
- Paradis saffron 1 x 100 mg sachet- Crushed
- Grated parmesan 1/3 cup
Serves 2 – 4
Melt your butter on med/low heat in a pan and add shallots and cook until translucent.
Add in your rice and stir it for 3-4 minutes.
Add white wine and stir for 3-4 minutes, add your stock one cup at a time while stirring, keep on adding the stock as it gets absorbed.
Add crushed Paradis saffron and stir. Add more stock is required till the rice is al dente.
Add your grated parmesan and stir until melted. Add salt to your taste.
